Stovetop Cornbread
1 cup cornmeal 3/4 cup of evaporated milk 2 Tbs oil 2 Tbs honey 1 egg 1 tsp salt 2 tsp baking soda
1. Heat skillet to high. 2. Mix milk, egg, oil and honey in a bowl. 3. Mix in cornmeal, salt, and baking soda. 4. Grease sides and bottom of skillet with oil, reduce heat to medium low, pour in the mixture, and cover skillet. 5. Cook until center is slightly firm (8-10 minutes, but this can vary depending on stove and weather). 6. Turn off heat and set aside for 5 minutes.
Serve with butter and honey. |
