Salted Salmon (Gravad Lax)
Make at home and bring aboard
2 fillets Salmon of equal size
1/2 cup coarse salt
4 Tbs sugar
3-4 tsp pepper
fresh dill
shot of vodka
1. Mix sugar and pepper
2. Cover bottom of loaf pan with 1/4 cup salt
3. Place one fillet skin down on salt
4. Rub the fillet with half the sugar/pepper mix
5. Pour ½ shot of vodka over the fillet
6. Cover with half the dill
7. Rub the second file with the remaining sugar/pepper
mix
8. Pour remain vodka over the fillet
9. Place fillet skin side up on the other fillet
10. Cover with remaining dill
11. Cover with foil or lid and put in refrigerator for 4
days.
Serve with mustard dressing made of:
3 tablespoons dark mustard
2 tablespoons sugar
4 tablespoons white wine vinegar
1/4 finely chopped fresh dill
1. Combine mustard, sugar, and vinegar
2. Add 3/4 cup oil (pref. Olive oil) in small stream while
beating
3. Add chopped dill
Serve with a salad and crisp white wine.
