Rice Pudding

5 cups whole milk*
1/2 cup rice
2 eggs beaten or reconstituted egg power
1/2 cup sugar
2 tsp vanilla extract
2 tsp cinnamon powder
1/2 cup raisins

1. Boil milk in a sauce pan, add rice.
2. Reduce cooking temperature to low heat and cook 20 minutes, stirring often.
3. Add eggs.
4. Stir in sugar a little at a time.
5. Add vanilla and continue cooking on low heat, stirring continually, until thickened (about 10 minutes)
6. Remove from stove. Add cinnamon and raisins.
7. Set aside to cool.

* If you use low fat milk, increase rice to 3/4 cup and expect thickening time to increase somewhat.
