Omelets

8 eggs (or equivalent from powdered eggs)
3 Tbs cooking oil
salt and pepper

1. Put 1 Tbs oil in a frying pan and heat to medium or medium low temperature.
2. Add salt and pepper to eggs in mixing bowl and beat.
3. Pour 1/3 of the mixture into to frying pan.
4. When eggs are set, add one of the following sets of ingredients to one half side of the eggs in the pan:

*Avacado slices and bacon -- serve with salsa on the side
*Canned spinach (8 oz / 220 g, drained and dried) and parmesan or feta cheese
*Canned mushrooms (8 oz / 220 g, drained and dried) and grated cheese
*Diced ham and grated cheese -- serve with salsa on the side)

5. Fold the second half over the filling ingredients and cook 2-3 minutes more. Cut into thirds and serve.

6. Continue with the process two more times to use the remaining egg mixture
