Light Pasta Salad
1/2 to 3/4 pounds of pasta (farfalle, fusilli, or penne) 1 diced small onion 1/2 cup red pepper 1 tsp salt 1/8 cup olive oil 1/8 cup of red wine vinegar
1. Cook, drain, and let pasta cool 2. Add diced onion, celery, pepper, parsley, and salt 3. Add olive oil and vinegar as dressing 4. Cover and set aside to marinate 1-4 hours |
