Hearty Breakfast Potatoes
6-8 medium potatoes 1 diced onion 1 diced garlic clove 1 (14 oz /400 g) can of crushed tomatos 2 tsp salt cooking oil
1. Pour 2 tbs. oil into skillet or frying pan. 2. Add onion and garlic. Cook until they begin to brown. 3. Add potatoes and sprinkle on salt. 4. Fry until potatoes are brown (about 20 minutes), turning frequently with a spatula. Add small amounts of additional oil as necessary during the frying process. 5. Add crushed tomato. Cook for 5 minutes and serve. |
