Garbanzo Bean (Chickpea) Salad
1 (8 oz / 220 g) can of garbanzos
1 diced small onion
1 cup diced celery
1/2 cup red pepper
1 tbs dried parsley or 1/2 cup chopped fresh parsley
1 tsp salt
1/8 cup olive oil
1/8 cup of lemon juice (or red wine vinegar)
1. Drain garbanzos and put into bowl
2. Add diced onion, celery, pepper, parsley, and salt
3. Add olive oil and lemon juice (or vinegar) as dressing
4. Cover and set aside to marinate 1-4 hours
