Eggplant Parmesan

1 (28 oz / 800 g) jar or can of sliced eggplant
3 Tbs flour
2 Tbs olive oil
1 can tomato pasta sauce
1 cup grated parmesan cheese
1 Tbs dried basil

1. Drain and eggplant slices.
2. Add oil to frying pan and heat to medium high.
3. Dip eggplant slices in flour and fry until browned.
4. Put a thin layer of pasta sauce on the bottom of a baking pan and add a layer of fried eggplant, pasta sauce, basil, and cheese. Continue building up layers. When eggplant is finished, cover with remaining pasta sauce, basil and cheese.
5. Bake in medium high oven for 20 minutes.

Serve with garlic bread.
