Cheese and Olive Enchiladas
1 can of black olives, chopped
3 cups cheese, grated
1 medium onion, diced
2 Tbs parsley, dried
1 can enchilada sauce
1 package tortillas
1. Mix olives, 2 1/2 cups of cheese, onion and parsley
in a bowl.
2. Pour half enchilada sauce in bottom of baking dish.
Coat a tortilla with sauce from the dish, add 3 Tbs of
filling mixture to tortilla and roll. Continue the process,
filling the remaining tortilla.
3. Pour remaining enchilada sauce over the filled
tortillas.
4. Sprinkle remaining 1/2 cup of cheese on the top.
5. Bake on medium high heat for 20 minutes.
