Cheese Crepes
2 cups flour
4 eggs
1 cup milk
1 cup water
1/4 cup oil
1. Heat frying pan or skilled to medium-high temperature
2. Place flour and eggs in bowl, gradually add milk and water. Then
add oil. Beat well.
3. Lightly oil pan with oil on a paper towel.
4. Pour 1/4 cup batter into pan.
5. Cook 2 minutes until bottom is dry, turn and cook 2 minutes more.
Set crepes aside until all crepes are ready.
Heat oven to medium high and make a cheese filling using
emmenthal, gouda, or parmesean cheese and one of the following:
* drained can diced cooked chicken
* drained can cooked shrimp
* diced ham and diced sauted onions
* drained can cooked salmon
* drained can of spinach
Place 2-3 Tbs of the filling in each crepe, roll them, and set in
baking pan. Warm in oven until cheese melts (5-10 minutes).
