Bruschetta
1 baguette
4 ripe tomatoes, chopped
1/3 cup olive oil
2 Tbs balsamic vinegar
3 cloves garlic, diced
1/2 fresh basil leaves
salt and pepper
1. Cut the baguette into slices, put on baking sheet, brush with
oil and toast in the oven until lightly brown. Remove and set
aside.
2. Add remaining oil to frying pan and saute garlic until
translucent.
3. Add tomatos and balsamic vinegar to frying pan. Cook 2-3
minutes over medium heat.
4. Add basil leaves and salt and pepper to taste. Cook 2 more
minutes.
5. Spoon ingredients onto pieces of toast and serve.
