Fajitas
2 lbs. flank steak or chicken breasts
1 large onion, sliced
1 red pepper, sliced
1 yellow or green pepper, sliced
5 cloves garlic
1/2 cup oil
1/2 cup lime juice
1 Tbs chili powder
1 tsp hot sauce
1 tsp cumin
1/2 cup chopped fresh cilantro
salsa
sour cream
1 package tortillas
1. Marinate flank steak or chicken in 1/2 cup oil, 1/2 cup
lime juice, 5 cloves garlic, 1 Tbs chili powder, 1 tsp hot
sauce, 1 tsp cumin and 1/4 cup cilantro. Let sit for 6-12
hours.
2. Cook meat on a grill or in a grill pan. Cool 10 minutes
and cut into thin slices and place on serving plate.
3. Sauté onion and peppers and place in serving bowel.
4. Warm tortillas in the oven.
5. Serve with salsa, sour cream, and 1/4 cup fresh
cilantro in serving bowls.
The crew can assemble their own fajitas using the
toppings of their choice.
